Aubert greeted us in his small family owned winery where he explained his whole bunch process for his Pommards and we were also allured by the gorgeous perfume of his entry level Bourgogne that truly won us away!

Savoir-Faire – For the "Pommard", the objective is the production of "great wines of guard". A very original technique of vinification is implemented: - manual sorting of the harvest if necessary - vatting whole bunches on a bottom of vat of grapes slightly trampled on the feet - progressive plummeting in tank after a phase of semi-carbonic maceration - long maceration and long fermentation of unseeded grapes, (vatting for 16 to 26 days.) - aging in oak barrels, bottling without sticking or filtering whenever possible. The final result sought: strongly structured wines and a festival of aromatic sensations.

Other Info – 20 to 30% of new oak is used for the Pommard ‘Les Trois Follots’, testifying to the quality of the wine

our visit to the domaine

We had an in-depth tour of the domain that underwent some major work in1992, in order to be able to ensure the breeding, bottling and conservation of all the wines in good technical conditions: demolition of unsuitable buildings at the end of the courtyard, digging a cellar and connection to the old cellar. Above was built a new building, with strong insulation, for the dressing of the bottles and the storage of the conditioned wines.

We then tasted the wines upstairs with Aubert and we were impressed by their precise deep rich qualities.
